A café in Riyadh and a café in Jeddah can pour the same espresso recipe and get two different cups. The reason is the water. Saudi mains water is not one product. It is a blend, and the blend changes from city to city and sometimes from season to season. Why Saudi feed water needs more than a filter
According to the Saudi water supply overview, about half of the Kingdom's drinking water is desalinated, around 40% is groundwater and only about 10% is surface water, mostly in the mountainous southwest. Riyadh draws about two thirds of its supply from desalinated seawater pumped roughly 467 km inland, with the rest from groundwater.
Two things follow for a commercial kitchen or café:
- The mix moves. Desalinated water is low in minerals. Groundwater is not. Published surveys of groundwater in regions such as Hail have measured total dissolved solids (TDS) from about 258 to 775 ppm and total hardness from about 72 to 310 ppm. A site on a mostly groundwater feed sees a very different supply from a site on mostly desalinated water.
- The supply is changing. The Saudi Water Authority is moving from thermal desalination to seawater reverse osmosis. Water from reverse osmosis plants typically carries more dissolved solids than thermal distillate, so a site that was soft last year may see a different profile as the source changes.
A fixed filter cannot follow that. A reverse osmosis system with a blending valve can, because you set the target at the machine, not at the mains.
What the EZ-RO does
The Everpure EZ-RO is a configurable RO platform for foodservice. It combines a membrane, a storage tank, mineral addition and a blending capability in one unit. It produces low, consistent TDS water, which protects equipment and gives drinks a repeatable base. Everpure is Pentair's foodservice water brand. Setting the right water for Saudi coffee
Saudi café culture is growing fast. Market reports put the number of cafés above 3,500 nationwide and expect branded coffee outlets to reach about 5,350 by 2027 (see Business Wire and World Coffee Portal). More specialty shops means more owners who care about extraction, not just speed.
The Specialty Coffee Association (SCA) recommends a target of around 150 mg/L TDS for brewing water, within an acceptable range of 75 to 250 mg/L. Water that is too hard scales equipment. Water that is too pure can taste flat.
Pure RO water sits below that range. The EZ-RO closes the gap two ways. A blending valve mixes a controlled share of filtered feed water back into the permeate. Mineral addition cartridges return calcium and magnesium in measured amounts. You set a TDS once and the machine holds it. For a multi-branch operator, that is how the cup in Dammam matches the cup in Riyadh.
Hard feed water: protect the membrane first
Where feed water is hard or high in TDS, the membrane needs protection or it will foul early. We specify pre-treatment as part of every assessment, sized to the feed water at your address, not to a generic figure. In practice that can mean sediment and carbon stages, softening, or scale control ahead of the RO. We do not guess it from the city name, because two sites in the same city can differ.
Steam kitchens, hotels and ice
Scale is the main enemy of anything that heats water. A thin layer on an element insulates it, so the element works harder, uses more energy and fails sooner. Combi ovens, steamers, steam-jacketed kettles, boilers and dishwashers all benefit from controlled-mineral water.
Ice is a Saudi special case. Ice goes straight into drinks, so its water quality is a food-safety matter as well as a taste matter. Saudi food safety is overseen by the Saudi Food and Drug Authority (SFDA), which also licenses water and ice factories, and national standards cover unbottled drinking water (GSO 149) and ice for human consumption. Water efficiency
Every RO system sends some water to drain. Pentair rates the EZ-RO's high-efficiency membrane at up to 50% recovery, about twice a standard RO membrane. Is Saudi tap water the same in every city?
